The dishes reflect Japanese influence on Peruvian cuisine as seen in hamachi tiradito, wherein raw yellowtail is sliced and infused with uni, coconut and matcha. Cabbage with miso, nori, anchovy and furikake-seasoned quinoa is a complex, delicious way to get your vegetables. Another standout from chef Erik Ramirez is panko-breaded pork paired with green udon noodles. Reservations are recommended, even for barstools.
